Prosciutto Wrapped Chicken

Ingredients:

2 cloves garlic

1/4 cup butter

4 chicken breast

8 thin slices of prosciutto (I ask the deli to slice them a little thick)

1 1/4 cups chicken stock

1/2 cup orange juice

1/2 cup white sugar

1 1/2 cups fresh cranberries (I just use a can of cranberries and it works great!)


Put in glass baking pan. Mix minced garlic into softened butter. Cut slit into each chicken breast and fill with garlic butter. Wrap each chicken breast with 2 slices of prosciutto and put into pan. Pour in chicken stock. Bake chicken until no longer pink, about 30 min, & bake at 350 for 40 min. Once finished, remove chicken from oven and cover with foil. Allow to rest for 10 min. Meanwhile, bring the cooking liquid from the chicken, the orange juice, sugar in a saucepan over medium high heat. Stir in cranberries and cook until they begin to pop, about 10 min. Strain to discard the solids, and serve with cranberry juice.

Lemon Pepper Salmon!

We try to eat fish once a week and lately, I have been using this recipe. I sometimes improve a little on how much of the seasonings I use (like not so much Oregano, but still a good amount, and not too much lemon pepper.)

Ingredients

- 1 lb of Salmon

- 2 Tbsp lime or lemon juice

- 1 Tbsp Fresh Oregano

- 2 Tbsp Olive Oil

- 2 cloves Garlic

- 1 Tsp Lemon Pepper

Marinade in ingredients for 30-1 1/2 hrs. (I will admit at not letting mine sit for this long, and sometimes only having it sit for about 15 min and then sticking it in the oven, and it still taste good.)

Keep marinade and broil 4 inches from the heat 8-12 min. Or can cook in over regular on 350 for about 20-25 min or so? Check to see when flaky. Serve with steamed vegetable (carrots, mushrooms, squash). I also like to serve this with wild and long grain rice.

So here's our two cents on some of our old favorites that we have been using lately..

1. Cayenne Chicken with Avocado Salsa- from Maria (this one's got a little kick, so we sometimes add a little less cayenne pepper and not too much lime juice to the salsa. It is really yummy though!) You can find it here.

Those are just a couple...I might also post an amazing hamburger recipe that my brother in law makes, that are seriously the BEST hamburgers I have ever eaten! After all, it is grilling season!
