Chicken Mango (x2)

Layer in crock pot:

3-4 frozen chicken breast
1 pkg taco seasoning mix
1 can black beans, drained
1 container 48oz Mango Salsa (with peaches) from Costco

Cook on low 6-7 hours. Remove chicken, shred it with a fork, return to crock pot and cook 30 additional minutes.

Serve with shredded cheese wrapped in flour tortillas. Add a green salad on the side.

Yeild: 10-12 servings


Mango Chicken Variation:

1 container of Mango Salsa
1 cup brown sugar
Chicken Breasts

Follow same cooking instructions as above. Serve over rice...or in tortillas!

I was given these two recipes but I actually did my own variation. I used 1/2 the container of salsa, 1 can of black beans and 1/2 cup brown sugar. It turned out really, really good! It made plenty for us and another family. Let me know what works for you!

Salsa Chicken

put a good amount of salsa over chicken breasts and bake for about 25 min.

When chicken is done put sliced cheese (I like cheddar, but doesn't matter) over and put back to oven until melted. Serve with sour cream.

homemade salsa

ok, I could probably live off of chips and salsa alone! This is a recipe for yummy, fast, restaurant style salsa!

Ingredients

1 28 oz. can of tomatoes or for fresh salsa use 4
good size tomatoes uncooked
2 Garlic cloves
1/3 to half an onion
1 lime
cilantro
1 jalapeno or Serrano pepper
salt to taste

Take your tomatoes and put them in the blender along
with your garlic, onion, cilantro, peppers, lime and
salt blend it until you see all the ingredients have
come together and mixed well into the salsa. You can
always add more of what you like best if you want more
heat add more peppers if you like tangy add more lime. Enjoy!
