Cashew Chicken

Saute:

2 T butter
1/2 c chopped onion
1 c chopped celery

Add:

2 T soy sauce
2 cans cream of mushroom soup
4 c chicken or turkey, diced

Bake in 9x13 pan at 350 for about 45 minutes or until hot and bubbly. Top with 1 can of Chinese noodles (chow mein noodles) and 1/2 cup of cashews for the last 5-10 minutes. Serve over rice.

We made this the other night and it was really yummy! I couldn't find Chinese noodles, so I just used "French's, French Fried Onions" for the topping with the cashews and it was still really good!
