Prosciutto Wrapped Chicken


2 cloves garlic

1/4 cup butter

4 chicken breast

8 thin slices of prosciutto (I ask the deli to slice them a little thick)

1 1/4 cups chicken stock

1/2 cup orange juice

1/2 cup white sugar

1 1/2 cups fresh cranberries (I just use a can of cranberries and it works great!)

Put in glass baking pan. Mix minced garlic into softened butter. Cut slit into each chicken breast and fill with garlic butter. Wrap each chicken breast with 2 slices of prosciutto and put into pan. Pour in chicken stock. Bake chicken until no longer pink, about 30 min, & bake at 350 for 40 min. Once finished, remove chicken from oven and cover with foil. Allow to rest for 10 min. Meanwhile, bring the cooking liquid from the chicken, the orange juice, sugar in a saucepan over medium high heat. Stir in cranberries and cook until they begin to pop, about 10 min. Strain to discard the solids, and serve with cranberry juice.
