Delicious Lasagna!


This is my staple for making Lasagna. It always seems to turn out really good and makes for great left overs! (This really isn't that hard to make either. )

Ingredients:
- 1 lb. ground beef
- 1 clove garlic
- 1 onion
- 1 15 oz. can tomato sauce
- 1 15 oz. can diced tomatoes
- 3/4 tsp. salt
- 3/4 tsp. pepper
- 1/2 tsp. oregano
- 1 box lasagna noodles (there are usually about 18 pieces in a box, & I use about 8-9 pieces)
- 2 c Cheddar cheese (I have used the mixed cheese in a bag before and it's fine)
- 2 c. Mozzarella cheese (again, I have used the bagged cheese here)
- 12 oz. cottage cheese

Start boiling a large pot of water (for noodles later). Cook beef with garlic in a large skillet. Drain. Add the onion and cook. Add tomato sauce and tomatoes. Add salt and pepper and oregano. Cool for a minute. By now your noodles should be cooking in the pot of boiling water. When noodles are done, lay out on paper towels to cool. Then, layer in a 9x13 inch pan starting with the sauce, noodles, cheddar, mozzarella and cottage cheese. Repeat once more, which should take up all your ingredients. Bake at 350 until bubbly in center (about 30-45 min). My oven cooks it in 40 min, but I know it could be different for everyone's ovens. Eat your hearts out.

Calico Beans: For the Pregnant One

Saute together:

1 lb ground beef
1/2 lb bacon
1/2 c chopped onion

Drain off fat. Add:

1/2 c ketchup (maybe up to 1 c)
1/2 scant c. brown sugar
2 T prepared mustard
3 T vinegar
(I usually make the sauce separately and pour it in.)

Stir well. Then add:

1 lg can pork & beans
1 can red kidney beans
1 can lima beans

Simmer for 1 1/2 hours. Stir often. You can also put it into a crockpot and cook it for many hours.

(You can do any type of variation of this by adding corn, mushrooms or whatever else. We don't really like lima beans, so I double one of the other types. This is a fantastic meal to make for a lot of people. My mom makes it very often...maybe too often!)

Easy Italian Pasta Bake

1 lb. ground beef
3 cups penne pasta or rotini pasta, cooked, drained
1 jar (26 oz) spaghetti sauce
1/3 cup parmesan and romano cheese, divided
1 1/2 cups shredded mozzarella cheese

Brown meat; drain. Add pasta, sauce and half of the parmesan and romano cheese; mix well. Put into 13x9 baking dish and top with mozzarella cheese and remaining parmesan and romano cheese. Bake 20 minutes at 375 F or until heated through.

Tin Foil Dinners!

Ok, I lied. That was not my last one for today. These are fun to make anywhere. Not just while you are camping,...you can do them at a bar-b-cue or even in your own oven. You can add or subtract from these things if you don't like them. I am pretty sure these calculations are for one tin foil dinner.

Ingredients:
- Tin foil
- 1 Potatoe (cut up)
- 1/3 lb of hamburger
- 1/2 onion (add however much you would like)
- Mushrooms (sliced)
- Baby carrots
- Salt and Pepper (lots of it)
- Butter cut into little cubes
- Suggestion: After it has cooked, we like to eat it with ketchup.

Get two pieces of tin foil and lay them in a "t" shape. Mix everything together and add it onto the tin foil. Put the butter on last, cut up into little pieces, then wrap the tin foil up. Bake @ 350 for 30-40 min. Enjoy your hearty meal!

Da Big Kahuna's!

This is a favorite between Ren & I. Great for bar-b-cue's and any other time,...like feeding the missionary's! ha!

Ingredients:
- 1 lb of hamburger
- Any type of ham, sliced thick & grilled
- Pineapple slices (in the can)
- Bar-b-cue sauce (we have been using "Kraft- Hickory Smoke" from IGA)
- Mayo
- Some good buns

Make the hamburger's into Patties and put them on the grill. Toast the buns and put a good amount of mayo on them. Next comes the Bar-b-cue sauce, then a slice and a half of the pineapple slices. Put on the hamburger and the ham and presto,....you got one big Kahuna!
