Menu Monday

I know what it's like to be stuck in a rut when it comes to making dinner. I thought it would be helpful if we start posting our weekly menus to help one another get some ideas and simplify the process. And in a month or two I can come back to my menu from this week and recreate. Please feel free to jump in on the fun!

Monday: Black Bean Burritos with a garden salad
Tuesday: Shish-ka-bobs (red peppers, zucchini, and steak marinaded in a mequite with lime sauce-about $1 at the store like the target brand the best so far) served with a cesar salad from a bag.
Wednesday: Thai Sesame Noodles with ginger carrots and a green smoothie.
Thursday: Marinaded chicken grilled with a side salad.
Friday: Our turn to babysit- chicken nuggets and french fries
Saturday: Date night
Sunday: Zucchini Chicken Casserole that I love! ( The recipe makes a 9 x13 but we will never eat that much. I split it between 2 8x8 pans and freeze one and save it for a Sunday- we don't get out of church until 4:30). with Rhodes rolls.

*If it seems weird to you that we are still having a lot of summer meals it's because we live in Texas where it is always summer. Hoping to start some yummy fall soups soon...when it is fall here.

Southwestern BBQ Chicken Salad

Southwestern BBQ Chicken Salad
2 large chicken breasts, cooked and shredded
1 cup BBQ sauce

1/2 head Romaine lettuce, chopped
1/2 head Iceberg lettuce, chopped
1 can corn, drained
1 can black beans, drained and rinsed
1 bunch green onions, chopped
1/2 bunch cilantro, chopped
4 Roma tomatoes, diced
2 Haas avocados, diced

shredded cheese, Mexican blend or cheddar
crispy tortilla strips

Stir shredded chicken in with the BBQ sauce until well coated. Of course you can use less or more sauce, it’s up to you! I like quite a bit since I love the smoky flavor of BBQ sauce in a salad. Toss together the lettuce, cilantro, corn, beans, and chopped veggies. Top with shredded chicken, cheese and crispy tortilla strips. Drizzle ranch or cilantro lime dressing over salad and enjoy!
*to make crispy tortilla strips simply slice about 10 corn tortillas in narrow strips and place on cookie sheet. Spray with vegetable oil cooking spray and sprinkle generously with salt. Place under the broiler and let bake until crispy and brown around the edges.*

*** This recipe comes from The Sisters Cafe, a fabulous cooking blog that I love and visit all the time. Everything on the site is good!

This is one of my favorites from that site.

Corn Bread-- and Bacon-Stuffed Pork Chops

This is as good as it sounds! We had garlic mashed potatoes and green beans as side dishes.

6 pork rib or loin chops, 1 to 1 1/4 inches thick (about 4 pounds)
4 slices of bacon, cut into 1/2-inch pieces
1 medium onion, chopped (1/2 cup)
1 small green bell pepper, chopped (1/2 cup)
1 cup corn bread stuffing crumbs
1/2 cup water
1/2 cup shredded Cheddar cheese
1/2 tsp seasoned salt
1/2 tsp dried marjoram leaves
1/4 tsp pepper

1. Heat oven to 350

2. Make a pocket in each pork chop by cutting into side of chop toward the bone.

3. Cook bacon in 12-inch skillet over medium heat, stirring occasionally, until crisp. Stir in onion and bell pepper. Cook 2 to 3 minutes, stirring occasionally, until vegetables are crisp-tender; remove from heat. Drain. Stir in stuffing crumbs and water until well mixed. Stir in cheese.

4. Sprinkle both sides of pork with seasoned salt, marjoram and pepper. Fill pockets with about 1/3 cup corn bread mixture. Cook pork in same skillet over medium heat, turning once, until brown. Place pork in ungreased rectangular pan, 13 x 9 x 2 inches. Cover tightly with aluminum foil.

5. Bake 45 minutes. Uncover and bake about 15 minutes longer or until pork is slightly pink when cut near bone.

Liquid Laundry Detergent

Here is something totally different! This isn't the typical recipe that is shared on this site, but hopefully it can be useful to someone. I had never heard of these ingredients before I made this soap and so I had no idea what I was looking for, I have taken a picture of the ingredients so you won't have the trouble I did. I found everything in the Laundry aisle at my grocery store. I hope the Grenada girls can find what they need as this stuff works WAY better than that awful Breeze detergent. All the ingredients together cost around $5 and will last you for several batches. I have not priced it exactly but I have been told that 1 batch costs less than $1! For my family of 3 and being generous in the amount of soap I use 1 batch lasts me 6 weeks. As you can see in the picture Plastic juice bottles are the perfect storage containers. Can you tell I like it!?

1/3 bar grated Fels Naptha Soap
1/2 cup Washing Soda or sodium carbonate (NOT sodium bicarbonate)
1/2 cup Borax

You will need a small bucket (2 gallon size).
Put grated Fels Naptha into a large sauce pan. Add 6 cups water and heat, until soap melts. Add Washing Soda & Borax. Stir until dissolved & remove from heat. Pour 4 cups hot water into the bucket. Add soap mixture and stir. Now add 1 gallon (16 cups) plus 6 cups of water and stir. Let the soap sit for about 24 hours. It will gel. Use 1/2 cup per load.
